Rice and risotto dishes that taste as great as they make you feel.
3 Grains: Rice, Spelt and Barley Salad with Pulses
What you need
- [ ] 120g Riso Gallo 3 grains mix
- [ ] 30g dry chickpeas
- [ ] 30g dry lentils
- [ ] 1 tbsp olive oil
- [ ] 200g mixed vegetables
- [ ] lemon juice
- [ ] parsley
- [ ] salt and pepper
How to prepare:
First soak the pulses for at least 12 hours in plenty of water. Dry them thoroughly then put them in a pan and cover with 2 litres of unsalted water and cook for 60 minutes. Leave to rest for half an hour. Drain and leave to cool.
In the meantime cook the Riso Gallo 3 grains, rice, spelt and barley in plenty of salted water and when cooked drain and leave to cool.
Cut your chosen vegetables into small pieces and add to the 3 grains. Add the pulses and then add the parsley.
Season with oil, juice of the lemon and salt and pepper.
Leave to rest in the fridge for an hour before serving.
