VENERE WITH MIXED VEGETABLES AND COD
What you need
- [ ] 250g Venere black rice
- [ ] 4 fresh or frozen cod fillets
- [ ] 3 courgettes
- [ ] a handful of fresh or frozen peas
- [ ] 2 carrots
- [ ] half chopped onion
- [ ] 1 lime
- [ ] olive oil
- [ ] salt
How to prepare:
Preparation of the rice: Boil Venere rice in plenty of salted water for about 20 minutes, then drain and leave to cool.
Fry the onion in the olive oil; in the meantime finely chop the courgette and carrots.
Preparation of the sauce: Lightly fry the carrot, courgette and peas in the fried onion, and once they have coloured slightly remove from the heat: they need to be slightly cooked but still crunchy.
Cook the fish with oil and water, cooking it for about 15 minutes.
When the fish is ready, break up with a fork and put aside.
In a dish, mix the Venere rice with the vegetables and fish and add a squirt of lime.
Serve cold or lukewarm.
