Venere with mixed vegetables and cod

What you need

  • [   ] 250g Venere black rice
  • [   ] 4 fresh or frozen cod fillets
  • [   ] 3 courgettes
  • [   ] a handful of fresh or frozen peas
  • [   ] 2 carrots
  • [   ] half chopped onion
  • [   ] 1 lime
  • [   ] olive oil
  • [   ] salt

How to prepare:

Preparation of the rice: Boil Venere rice in plenty of salted water for about 20 minutes, then drain and leave to cool.
 
Fry the onion in the olive oil; in the meantime finely chop the courgette and carrots.
 
Preparation of the sauce: Lightly fry the carrot, courgette and peas in the fried onion, and once they have coloured slightly remove from the heat: they need to be slightly cooked but still crunchy.
 

Cook the fish with oil and water, cooking it for about 15 minutes.
 
When the fish is ready, break up with a fork and put aside.
 
In a dish, mix the Venere rice with the vegetables and fish and add a squirt of lime.
 
Serve cold or lukewarm.
