Chicken Salad with 3 Grains, Rice, Spelt and Barley

What you need

  • [   ] 300g Riso Gallo rice
  • [   ] spelt and barley
  • [   ] 250g chicken breast
  • [   ] 1/2 yellow pepper
  • [   ] 1/2 red pepper
  • [   ] 6 fresh basil leaves
  • [   ] Extra virgin olive oil
  • [   ] Salt and pepper

How to prepare:

Cut the chicken into strips. Grill the peppers and chicken on a very hot griddle. Once cooled remove the skins from the peppers and cut into cubes. Cut the chicken into cubes.


Put everything in a salad bowl with the torn basil leaves. Season with oil, salt and pepper and leave to rest.


Cook the rice in plenty of salty water. Drain and add to the chicken and pepper mix. Mix well and serve the salad cold or at room temperature.
